This hands-on class will teach you to prepare and can food in a water bath canner and a pressure canner. Instructor Colleen Foleen, in partnership with Texas A&M AgriLife Extension, will teach you how to prepare foods and jars, following a tested and approved recipe, and can foods in the class that will be finished and ready to take home at the end. You will learn about different types of canners and how to prepare different highacid foods including fruits, tomatoes, jams, jellies, and pickled products. Mireya Zapata returns to explain the principles of cake design as well as the many ways for using buttercream and royal icing. This session will cover icing coloring and consistency, as well as how to angle the bag and regulate the pressure. Students will learn how to use a coupler, piping bag, icing tip, flower nail, and other decorating equipment. Among the topics discussed are how to level cakes, crumb coat them, handle fondant, and create flowers. The class will meet in MCC's residential-style kitchen.
