This hands-on class will teach you to prepare and can food in a water bath canner and pressure canner. Instructor Colleen Foleen, in partnership with Texas A&M AgriLife Extension, will teach you how to prepare foods and jars, following a tested and approved recipe, and can foods in the class that will be finished and ready to take home at the end. You will learn about different types of canners and how to prepare different high acid foods including fruits, tomatoes, jams, jellies and pickled products. Home canning of your own produce as ingredients can be a very economical way to serve healthy meals for your family.

Spices and herbs used in Indian cuisines not only give a burst of flavor, but also possess nutritional and healing attributes because they are loaded with vitamins, minerals, and anti-inflammatory properties. We will take traditional recipes and modify them to contain less saturated fat, lower sodium, and less added sugars all while preserving traditional flavors. We will also modify modified recipes to apply current food safety recommendations as well as updateding cooking techniques for a modern kitchen.
